🍰 For the Cake
- 1 medium carrot (about 80–100g) 🥕, finely grated
- 2 cups (200g) almond flour
- 2 tbsp ground flaxseed
- 1 tsp cinnamon powder
- 1 tsp baking powder
- ¼ tsp baking soda
- Pinch of salt
- ¼ cup buttermilk
- 1 tsp vanilla extract
- ⅓ cup melted butter or coconut oil
- ½ cup ElixX Monk Fruit Sweetener
- 2 tbsp raisins (optional, for occasional treats—not strictly keto)
Instructions
Step 1 – Prepare
- Preheat oven to 170°C (340°F).
- Line a loaf pan or baking dish with parchment paper.
- Add 2 tbsp water in flaxseed; and keep it aside for 10 mins
Step 2 – Mix Dry Ingredients
In a bowl combine:
- Almond flour
- Cinnamon
- Baking powder
- Baking soda
- Salt
Mix well.
Step 3 – Mix Wet Ingredients
In another bowl whisk together:
- flaxseed mixed with water
- Melted butter
- Buttermilk
- Vanilla extract
- ElixX Monk Fruit Sweetener
Whisk until smooth.
Step 4 – Fold Everything Together
Add the wet ingredients into the dry ingredients.
Fold in:
- Grated carrot
- Raisins
Do not overmix.
Step 5 – Bake
Pour into the prepared baking pan.
Top with a few extra raisins if desired.
Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
